Our Favorite Health Starts at Work Event Recipes

If you came to the Health Starts at Work with Whole Foods event at E|SPACES in Cool Springs last night you were asking for the Thai wrap recipe because you couldn’t believe healthy food could taste so good.  For those of you who couldn’t make it to the event last night, you missed some tasty dishes.  I have listed the Double Green Smoothie recipe and done my best to list the ingredients for those excellent Thai Wraps below for you to try at home.  Special thanks to Whole Foods MarketHot Yoga Plus, Avalon Effect Light Therapy, and The YMCA for joining us to inspire healthy living and for Brentwood Homepage who covered the event in a recent article ”Maintaining Health at Work is Possible.”

Thai Rice Wraps

Ingredients:

  • Rice paper rounds
  • Rice noodles
  • Baked Thai-style tofu
  • Chopped lettuce
  • Chopped cucumber
  • Chopped avocado
  • Chopped fresh cilantro
  • Thinly sliced carrots
  • Crushed red pepper flakes to taste
  • 365 Organic Peanut Sauce for dipping

Optional Extras:

  • Grilled chicken
  • Chopped roasted peanuts
  • Bean Sprouts

Cook and drain the rice noodles and chop all the veggies, then dip the rice paper rounds in hot water and lay out on clean surface. Fill wraps with all the above listed ingredients and roll up then slice in half.  Dip in the Thai peanut sauce or your favorite Thai dipping sauce and enjoy!  Or go to Whole Foods Market and purchase these wraps at their prepared foods counter.

Double Green Smoothie

Ingredients:

  • 1 1/2 cups unsweetened non-dairy beverage, such as almond, rice, or soy
  • 2 dried apricots or 4 pitted dates
  • 1 banana
  • 1 cup chopped kale leaves
  • 1 cup spinach leaves
  • 1/2 cup fresh or frozen berries

Combine all ingredients in a blender and blend until smooth.

Waiting for the Front Doors to Open in Cool Springs

If you are like me, you hate waiting!

Which reminds me, I hate “waiting rooms” even more than waiting.  Why? Because somebody put them there on purpose for the specific purpose of making me wait!  And they are everywhere—office buildings, drivers license testing centers, doctors’ offices and hospitals.  Just think about it, they designed “waiting” into the system when they built the waiting rooms—why else would you build them?  That means that when you go to use their service, you know they are going to tell you to take a seat and it will be thirty minutes to an hour before they see you.  And to add insult to injury, they try to fake you off by putting magazines and TV’s and aquariums in the waiting rooms to make you think an hour is not really an hour.  I am sorry, but watching a Piranha swim in circles doesn’t do it for me.

The really sad thing is it doesn’t have to be that way.  Just as we have made great progress in taking warehouses out of manufacturing with pull and just-in-time systems, we can take waiting rooms out of services.  Think about it, if service providers can consistently be thirty minutes late, they can consistently be on time.

But I digress.  E|SPACES Cool Springs is about to open and I am tired of waiting.  We are actually pretty much on schedule, but that doesn’t mean I like waiting.  I am counting the days and hours.

We did the punch list last week.  The furniture was delivered on Saturday and will be assembled this week.  Most importantly, the Starbucks coffee machines—that is right, two—and the enterprise-grade Wi-Fi are in.  But the cork in the lobby is not, so we have to enter through the back doors.

By the way, there is no “waiting room” at E|SPACES.  There is a small lobby where visitors sign in using an iPad, which generates a phone call to the member they are visiting, or to an E|SPACES Concierge.  If the visitor is not greeted by a member quickly, a Concierge will see that the visitor is greeted.  There is almost no waiting!

So when will the front doors be open at Cool Springs?  Hopefully by the end of the week, but definitely the beginning of the next week.  If you would like a tour before then, let us know and we will be happy to schedule a tour—if you don’t mind going in the back door.

Construction Starts–86 Days

Construction on E|SPACES has started!  Josh and I visited the space today and saw the floor plan that we have been looking at on paper laid out on the concrete floors.  It looks great–very few walls, large spaces, high ceilings and great light.  We took some video and should have it up soon.

Our designers, Ginny Caldwell and Shannon Mikula at Southeast Venture, www.southeastventure.com have done a great job.  We will continue to meet with them weekly as we count down to opening.

Also, got our first business cards today.  We must be official if we have business cards!

Opening Countdown 88 Days

Wow, only 88 days left to the opening of E|SPACES.  This will be a really big week.  We should sign off on the buildout of the space, continue to work on the Web site and marketing materials, as well as add to the Member Council.  It is an exciting time.

This is Easter Sunday so not much work today, but a good day.

Opening Countdown 89 Days

Well it is official, E|SPACES is a Nashville-based  startup.  That is how the Tennessean described us.  It is really exciting to get our first mention in the press.  On Monday, an article appeared in the Tennessean about the Hill Center at Belle Meade being almost full, and we got a mention.  See - http://www.tennessean.com/article/20100329/DAVIDSON/100329010/Hill-Center-Belle-Meade-is-near-capacity And, the really amazing thing is that they put the pipe (|) in  E|SPACES.

The other exciting news in the article is that a Seattle’s Best Coffee is opening in the center.  That means that our members will have easy access to a coffee shop, several restaurants, a fitness center, spa, bank and other retail establishments.  It is a great location with great resources.

Worked on the sales presentation and made more progress on the Web site today.  Only 89 more days!
